HI! It’s been a while since I’ve popped on here and shared an *actual* recipe. I don’t really have a good reason for that other than busy + lazy = not a good combo. You know?
Anyway, things are slowing down in the back half of this week. I had an exam this morning and am not working again until Saturday. Woo! So, I’m taking it easy: I went for a training run earlier, am going to [solidcore] tonight, and I’m seeing Midland with my friend Frankie tomorrow. SO EXCITED! But you don’t care about that. You’re here for the Warm Black Bean and Corn Salad, aren’t you? I knew it.
I was at Trader Joe’s the other day just doin’ my thing and getting my groceries. If you’ve been to TJ’s before, you know that they usually have product samples at the back of the store. On this particular day, my store was sampling their Black Bean and Corn Salad. I’ve seen this product in their freezers before but I’ve never picked it up for one reason or another.
I gave the product a try and OMG. It was so good. I was like, “Matt, let’s get this.” And he said no because we can make it at home. Groan. But whatever, I made it at home. Like, 10 minutes before sharing this post. So, Matt hasn’t had a chance to try it yet because he’s at work. Sucka.
There are 8 ingredients in this recipe which, woah, daunting. But you likely have more than half of the ingredients already in your kitchen, right? Right. Other than that, you just need 15 minutes of your time and you’ve got an excellent side salad or dip for parties! Or be like me and use the salad as a hearty topping for your fajita bowls. Hell. Yes.
