Well, it has certainly been a while since I’ve been on here. Like, far too long and I solemnly swear I will never go that long again. I know I have fans here (hi!) so I’m sorry you’ve all missed me SO MUCH. 😉 Anyway, I’m BACK today with a delicious recipe for Cranberry White Chocolate Cookies!
Every year I flip-flop on my favorite holiday: some years it’s Thanksgiving and some years it’s Christmas. Truth be told, I think I like both because I get to spend time with my family + close friends because we all have time off from school and work. I actually had to work on Thanksgiving this year but I did the traditional turkey feast the Saturday prior with my dads side of the family and spent the Saturday after with my mom! I also happened to have a birthday at some point in there 😉 Matt + I did a little shopping – okay, looking – and dinner at Greek Islands! SOOO GOOD. We can catch up later –> let’s get into these cookies!
Cranberry White Chocolate Cookies
I have been making these Cranberry White Chocolate Cookies for a few years now. One year, I just decided I wanted to bake something different from the standard chocolate chip so, white chocolate + cranberry it is! And so I’ve been perfecting them ever since. Side note: Betty Crocker sells an easy-to-make cookie mix as a seasonal offering!
What I did to really perfect these cookies is take my chocolate chip cookie recipe and adapt for a lighter, nuttier tasting cookie. And the combination of creamy white chocolate + tangy dried cranberries = the perfect combination. These cookies are especially chewy because, like my chocolate chip cookies, I add just a bit of corn starch. Weird, I know, but SO GOOD. I add corn starch to practically all of my cookie recipes now because who doesn’t love a chewy cookie? Well, chewy on the inside and a li’l crunch on the outside. YES. PLEASE.
