Happy Cinco de Mayo! I love a Mexican-inspired meal any day of the week and even any time of day. But I thought today would be a good time to share five of my favorite personal Mexican-inspired recipes with you. Whether you’re celebrating with a large group tonight or this weekend or looking for a weeknight indulgence, I got you!

My weeknight chicken enchiladas are such an easy way to get into the Cinco de Mayo action without a ton of work. You probably have everything in your fridge or pantry anyway!

These chilaquiles con huevos are a fun spin on breakfast for dinner! And so, so yummy!

And let’s not forget about the snacks! Grab your favorite tortilla chips and serve with this warm black bean and corn salsa!

GUACAMOLE! I know garlic isn’t traditionally in guacamole but it’s so good. I love to roast a few cloves, smash them up, and mix them in. The roasted garlic really adds a nice, fun flavor!

And last but not least: skinny spicy watermelon margaritas! It’s not Cinco de Mayo without a delicious margarita, right?
