Crunchy shaved brussels sprouts, hearty kale greens, and a tangy vinaigrette? Yes, please! This Kale & Shaved Brussels Sprouts Salad is everything! It’s an excellent addition to any meal or add some protein and serve as an entree!

Alright. Most of us have been quarantining or ~social distancing~ for over a month now. We’ve baked all the breads and ordered all of the take-out. But it’s time to nourish our bodies with some vegetables. Say whaaaat?
Yeah, vegetables. I said it! But this Kale & Shaved Brussels Sprouts Salad isn’t just any ol’ salad. It’s full of hearty kale greens, crispy shaved brussels sprouts, and all the best mix-ins: roasted almonds, goat cheese, and a tangy vinaigrette. To whip together the vinaigrette, you only need a few kitchen staples: extra virgin olive oil, dijon mustard, some citrus juice, and a few seasonings. Easy peasy!
I’ll be making this salad two or three times a week for the foreseeable future. It’s JUST THAT GOOD!

Kale & Shaved Brussels Sprouts Salad
Ingredients
FOR THE SALAD
- 1 cup unsalted, unroasted almonds roasted + salted works if you're feeling lazy 😉
- 12 oz shaved brussels sprouts 1lb whole sprouts works as well
- 1 bunch tuscan or other curly kale
- 1 cup crumbled goat cheese
FOR THE DRESSING
- 1/4 cup lemon juice about 2 lemons
- 1/2 cup extra virgin olive oil
- 1 tbsp dijon mustard
- 1 shallot
- 1 garlic clove
- 1 tsp salt
- 1/2 tsp ground black pepper
Instructions
IF ROASTING/SALTING ALMONDS
- Preheat oven to 350F and line a baking sheet with aluminum foil. Roughly chop the almonds and place on baking sheet. Sprinkle salt across the almonds and bake for 5-8 minutes until toasted. Keep an eye on them as they easily burn.
FOR THE DRESSING
- Peel and chop the shallot and garlic. In a small mixing bowl, whisk together all of the ingredients and set aside.
FOR THE SALAD
- Remove center rib from kale and roughly chop the leaves. Toss with shaved brussels sprouts in a large salad bowl. Toss approximately half of your roasted almonds and goat cheese into the salad along with dressing. Arrange remaining almonds and goat cheese atop the salad and serve.
Notes
- Make things easier: use pre-shaved brussels sprouts. You are more than welcome to shave them/thinly slice them yourself but it’s time consuming and most grocery stores have pre-shaved sprouts.
- Serve with your favorite protein (I’d go with grilled chicken or fish) to make this an entree salad!
- If you’re not consuming all at once, only use dressing on the salad you’re consuming!
