What’s up? What’s happenin’? IT’S SUNDAY! It’s the start of a new week and that means a new meal plan! Matt and I are off to Boston at the end of the week. He’s running his FIRST Boston Marathon so our menu for this week consists of lots of carbs. Lots. Of. Carbs. For Matt, of course. But I will definitely be partaking in some of this pasta action.
Lemon Pesto Pasta Salad — It’s asparagus szn so I’m throwing together this delicious lemon pesto pasta salad. Lemon + parm + asparagus + pesto + your favorite pasta = quality combination.
Light Italian Chicken Meatballs – I l-o-v-e these li’l meatballs. Toss some spaghetti in some olive oil and top with an extra sprinkling of parmesan cheese and you’ve got yourself a yummy, carby dinner! Serve an arugula salad on the side because #balance.
Peach Rosemary Chicken Thighs — Can I let you guys in on a little secret? I whipped this recipe up and was like, shocked, when it turned out amazing. And now that peaches are showing up in my grocery store again, it’s time to make this recipe! Would be so yummy with some blistered green beans!
Chicken Fajita Bowls — I can’t believe I don’t have a recipe on the blog for this yet but chicken fajita bowls are my JAM. They’re so stupid-easy to make and they make for excellent leftovers as well.
Blueberry Lemon Muffins — Blueberry lemon is one of my favorite flavor combinations so I put it into muffin form. You know, for breakfast. Because muffins for breakfast are always a healthy choice, right?
